Summerday Oatmeal Cakes
A traditional Summerday recipe
- 4 cups rolled oats
- 1 cup butter
- 2/3 cup honey
- pinch of salt
- 1 tsp cinnaspice (optional)
Melt butter in medium pan. Add other ingredients and stir until well mixed. Spoon mixture onto greased tray and press down well. Bake at moderate heat for 30 minutes or until golden-brown. Cool for a few minutes, cut into squares while still warm, then serve when cold. Makes 10-15 squares.
